minutesA delicious pasta dish which could be eaten as a starter (or primo piatto as the Italians would say) or a main meal. Tasty with different type of sauces, tomato-based, ragu (like bolognese), pesto or any type of sauce you like.
Ingredients
1kg Potatoes
I egg (beaten)
1tsp salt
250g plain flour
Directions
- Boil potatoes with skins on until soft (approx. 25 minutes)
- Beat the egg whilst the potatoes are boiling
- Once potatoes are cooked, remove skins while potatoes are still warm
- Mash potatoes
- Add flour, salt and egg to potatoes and knead the mixture until it forms a smooth dough
- On a floured surface, roll out to form into a long log about 1cm high
- Cut into 2cm pieces
- Place in boiling water and boil until they rise to the surface, usually about 3 minutes
