A delicious pasta dish which could be eaten as a starter (or primo piatto as the Italians would say) or a main meal. Tasty with different type of sauces, tomato-based, ragu (like bolognese), pesto or any type of sauce you like.

Ingredients

  • 1kg Potatoes

  • I egg (beaten)

  • 1tsp salt

  • 250g plain flour

Directions

  • Boil potatoes with skins on until soft (approx. 25 minutes)
  • Beat the egg whilst the potatoes are boiling
  • Once potatoes are cooked, remove skins while potatoes are still warm
  • Mash potatoes
  • Add flour, salt and egg to potatoes and knead the mixture until it forms a smooth dough
  • On a floured surface, roll out to form into a long log about 1cm high
  • Cut into 2cm pieces
  • Place in boiling water and boil until they rise to the surface, usually about 3 minutes
